Stir 1¾ cups flour, 1 tablespoon baking powder, ¼ teaspoon salt, and 2 tablespoons of sugar. Set aside. In a large mixing bowl, combine 2½ cups Kellogg’s Raisin Bran cereal, 1¼ cups fat-free milk and 1⅓ cups honey. Let stand 3 minutes or until cereal softens. Add 1 egg and ¼ cup vegetable oil. Beat well. Add flour mixture, stirring until combined. Portion batter evenly into twelve 2½-inch muffin pan cups coated with cooking spray. Bake at 400 degrees for 20 minutes or until lightly browned. Serve warm.*
Carrot Spice Bread
In a large mixing bowl, combine 3 cups Kellogg’s Raisin Bran cereal, 1 cup orange juice, 4 egg whites and 1 tablespoon of vegetable oil. Let stand 3 minutes. Beat well. Add 1 package moist carrot cake mix with pudding, stirring thoroughly. Pour into a 9 x 5 x 3-inch loaf pan coated with cooking spray. Bake at 350 degrees for about 1 hour. Cool on wire rack for 15 minutes. Remove bread from pan; let stand until completely cool. Sprinkle with 1 tablespoon powdered sugar to serve.*
The Great Raisin Cookie
In a small bowl, combine 2 cups Kellogg’s Raisin Bran cereal, 1¼ cups all-purpose flour, ¾ cup whole wheat flour, 1 teaspoon baking soda and 1 teaspoon cinnamon. Set aside. In a large mixing bowl, beat ¾ cup butter or margarine, ⅔ cup sugar, and ½ cup brown sugar on medium speed of electric mixer until combined. Add 2 eggs, and 1 teaspoon vanilla. Beat until light and fluffy. Add flour mixture a little at a time and mix well after each addition. Stir in ½ cup raisins. Drop by teaspoon onto ungreased cookie sheet, lined with parchment paper if desired. Bake at 350 degrees for 10-13 minutes or until turning brown around the edges. Cool completely and serve.*
Pancake Bears Stir together 1 cup whole wheat flour, 1⅔ cups all-purpose flour, 2 tablespoons sugar, 1 tablespoon baking powder and ½ teaspoon salt. Set aside. In medium-size mixing bowl, beat 1 egg until foamy. Stir in 1¾ cups milk, 2 tablespoons vegetable oil and 1 cup Kellogg’s Raisin Bran cereal. Let stand 5 minutes. Stir again. Add flour mixture, stirring until combined. To make bears, pour about 2 tablespoons batter onto greased and preheated griddle for body and about 1 tablespoon next to body to make head. Add ½ to 1 teaspoon batter for each ear and paw. Cook, turning once, until golden brown. Brush with syrup. Decorate with raisins.
