  • Cracker Crusted Chicken Wings

     

    Prep Time: 10 minutes

    Cook Time: 20 minutes

    Total Time: 35 minutes

    Serves: 4 to 6

     

     

     

    Ingredients:

    2 cups crushed Crunchmaster® Multi-Grain Crackers

    2 green onions, finely chopped

    2 lb split chicken wings

    1/2 tsp each salt and pepper

    2 egg whites, beaten

    1/2 cup barbecue sauce

    2 tbsp hot sauce

    1 tbsp melted butter

    Veggie sticks, for serving (optional)

     

    Instructions:

    1. Preheat oven to 400˚F. In shallow plate, toss crushed crackers with green onions; set aside.

    2. Season chicken wings with salt and pepper. Coat in beaten eggs then dredge in cracker mixture. Arrange in single layer on foil-lined baking sheet brushed with oil. Bake for 20 to 25 minutes or until golden brown and crispy.

    3. Meanwhile, in large bowl, whisk together barbecue sauce, hot sauce and melted butter; toss with wings to coat.

    4. Serve with veggie sticks (if desired).

     

     

    Tips:

    · Adjust hot sauce to desired level of heat.

    · Serve with blue cheese or ranch dressing for dipping if desired.

    · Alternatively, instead of tossing the wings in sauce, serve sauce on the side for dipping.

    Ingredients:

    Crackers:

    1 pkg (4 oz each) Crunchmaster® Multi-Seed Original

    Canned Goods:

    1 can (19 oz) chickpeas, drained and rinsed

    Pantry:

    1/3 cup tahini paste

    1/3 cup strong brewed espresso, cooled

    Oil and Vinegar:

    1/4 cup extra-virgin olive oil

    Baking and Seasoning:

    1/4 cup dark chocolate chips

    1/4 cup packed brown sugar

    1 tsp vanilla extract

    1/4 tsp ground cinnamon

    Pinch sea salt

    1/4 cup dark chocolate shavings

    Condiments:

    2 tbsp maple syrup

     

    Directions:

    1. Place chocolate chips in microwave-safe bowl; microwave on high, stirring every 30 seconds, for about 2 minutes or until melted.

    2. In food processor or blender, purée melted chocolate chips, chickpeas, tahini paste, espresso, oil, sugar, vanilla, cinnamon, salt and maple syrup until smooth.

    3. Spoon into serving dish; garnish with shaved chocolate. Serve with crackers.

     

    Tip: Substitute strong brewed coffee for brewed espresso if desired.

  • Grilled Chicken Kabobs With Avocado

     

    Ingredients

    4 fresh large beets

    3 Tbsp. olive oil

    ¼ tsp. salt

    ¼ tsp. freshly ground white pepper

    1 lb. boneless chicken tenders

    2 Tbsp. olive oil

    1 cup Crunchmaster® Multi-Grain Crackers, finely ground

    1/2 cup crumbled feta cheese

    1/4 cup Greek plain yogurt

    2 tsp. fresh mint leaves, finely chopped

    2 tsp. balsamic vinegar

    1/2 small red onion, quartered

    Salt and pepper, to taste

    1 ripe avocado, peeled, pitted and diced

    2 Tbsp. sweet fruit salsa

    Cooking Spray

    Aluminum Foil

     

    Directions

    1. Heat grill to medium heat. Soak eight 6-inch wooden skewers in water for 15 minutes.

    2. Coat one side of a large piece of aluminum foil with cooking spray. Place beets and 3 Tbsp. of oil on foil; season with salt and pepper. Wrap foil over beets. Place beet packets on the grill; cook for 30 minutes or until beets are tender.

    3. Meanwhile, dip chicken tenders into 2 Tbsp. olive oil, then drench in Crunchmaster® Crackers. Place tenders onto soaked skewers; grill, turning occasionally, until chicken is cooked through, approximately 10-12 minutes.

    4. Meanwhile, in a food processor, blend feta, yogurt, mint, and balsamic vinegar until smooth.

    5. Remove beets from the grill; cut into 1-inch chunks; gently toss with feta mixture, red onion, salt and pepper.

    6. Transfer kebabs to a serving dish with prepared beets. Serve with a side of diced avocado with salsa.
